NHS Choices Condition

This simple and tasty curry is a great recipe for people with diabetes. It's low in fat and provides plenty of starchy carbohydrates and fibre to help control blood sugar levels. It counts as two of your 5-A-DAY.


Ingredients


225g red lentils
1 tsp ground ginger
1 tsp cumin
1 tsp turmeric
2 large potatoes, peeled and diced
2 tbsp oil
1 large onion, finely chopped
1 green pepper, deseeded and chopped
1 tsp curry powder
1 clove of garlic, finely chopped
4 medium tomatoes, diced
Black pepper


Instructions


Pour 850ml of water into a saucepan. Add the cumin, turmeric and half the ginger, and bring to the boil. Stir in the lentils, and allow to simmer for five minutes. Add the diced potato and continue cooking until the lentils have turned mushy (stir now and again to stop the mixture from sticking).

Meanwhile, heat the oil in another pan and fry the onion and pepper in it (over a fairly high heat) until the onion has browned. Then lower the heat and stir in the curry powder (according to your taste), garlic, the remaining ginger and the chopped tomatoes. Cook for two minutes, then add the lentil mixture, season with black pepper and cook gently for a further five to 10 minutes (stirring from time to time). Serve with rice and yoghurt. Serves 2-3.
