NHS Choices Condition

A quick and easy meal. Great with grilled lean bacon in place of ham.

Ingredients


2 eggs
2 muffins, split in half
2 tsp hollandaise sauce
1 tomato, sliced
A few lettuce leaves
2 slices of lean ham
Salt and freshly ground black pepper


Instructions


Poach the eggs by breaking them into a pan of just-simmering water and cook for four to five minutes. Meanwhile, toast the muffin halves and spread with the hollandaise sauce. Top two halves with tomato, lettuce and ham, then place a poached egg on top. Season well and serve immediately, topped with the other muffin halves. Serves 2.
